Pastry for 9” pie

You will need:

1 cup sugar

2 T flour

½ t cinnamon

½ t nutmeg

pinch of salt

6-8 large peaches (about 5 cups, sliced thin)

1 t lemon juice

2 T butter, cut up into small pieces

  1. Prepare pastry. Preheat oven to 425. Place pastry in 9” pie dish.
  2. Combine sugar, nutmeg, cinnamon, flour and salt in bowl. Add peaches and juice- toss to coat. Spoon into crust. Dot with butter.
  3. Cut remaining pastry into ½ inch pieces and arrange in a lattice pattern over top of pie. Fold edge of bottom crust over strip ends; flute edge.
  4. Place on cookie sheet. Bake 20 minutes, then reduce to 375 for 40 minutes.
