Pastry for 9” pie
You will need:
1 cup sugar
2 T flour
½ t cinnamon
½ t nutmeg
pinch of salt
6-8 large peaches (about 5 cups, sliced thin)
1 t lemon juice
2 T butter, cut up into small pieces
- Prepare pastry. Preheat oven to 425. Place pastry in 9” pie dish.
- Combine sugar, nutmeg, cinnamon, flour and salt in bowl. Add peaches and juice- toss to coat. Spoon into crust. Dot with butter.
- Cut remaining pastry into ½ inch pieces and arrange in a lattice pattern over top of pie. Fold edge of bottom crust over strip ends; flute edge.
- Place on cookie sheet. Bake 20 minutes, then reduce to 375 for 40 minutes.
