I prefer this banana bread to all others I've had before, but I may be biased. You can make this with walnuts, but I hate eating cakes and the like with 'interruptions' such as fruit and nuts. This is a particularly moist bread, not like the usual 'coffee cake' consistency of most banana loaves. Tastes great when microwaved and buttered! Enjoy.


You will need:

½' cup butter, softened

½' cup brown sugar

½' cup white sugar

2 eggs

½' teaspoon salt

1 ¼ cups flour

¾' teaspoon baking soda

½' teaspoon cinnamon

dash of freshly ground nutmeg

1 cup bananas, mashed ( about two large, ripe bananas)

1 teaspoon vanilla


Directions:

Preheat oven to 350 degrees.

Cream butter and sugars well.

Add eggs. Mix well.

Mix flour, salt, soda and spices; add to first mixture.

Add bananas, vanilla and nuts (if using).

Pour in a greased loaf pan. (Makes one large loaf or two small ones.)

Bake large loaf 45 minutes to one hour until toothpick comes out clean. Small loaves bake in '½' hour plus.


Place on wire rack to cool. Wrap in foil. Keeps well frozen.
